6# raw fish (northern pike) cut into small pieces
2/3 cup pickling salt
2 cups vinegar
Soak in refrigerator for 6 days
Drain, soak fish in fresh water for 4-6 hours or overnight. Drain again, spread out and let dry for 1/2 hour.
Boil, let cool then pour over fish which has been layered with raw onions:
4 cup white vinegar
4 cup sugar
2 Tbsp pickling spice
2 cups sweet white wine (riunite Blanco)
