Kielbasa and Vegetables
Non- stick cooking spray
8 oz. Turkey kielbasa sausage, cut into 1/8 inch rounds
1 c. chopped onion
3/4 c. finely chopped celery
1 can [16oz.] diced tomatoes, undrained
½ c. uncooked orzo pasta
½ tsp. Diced thyme leaves
1/3 c. water
2 tsp. Olive oil
Hot Pepper Sauce
Heat over ot 350 deg.
Spray large non-stick skillet with cooking spray. Heat over high heat until hot. Add sausage; cook and stir 10 to 15 min or until sausage is brown. Add onion, pepper, and celery; cook an additional 3 min.
Spoon into a 1-1/2 quart casserole dish. Add tomatoes, orzo, thyme and water; cover. Bake 350 deg. For 1 hour, stirring after 30 min. or until heated through. Add olive oil; stir to combine. Let stand, covered 10 min. before serving. Serve with hot pepper sauce
