Better then potato Salad
4 c. cooked rice [2 c. uncooked rice]
2 c. cooked macaroni [1 c. uncooked]
4 hard boiled eggs, chopped
1/4 c. minced onion
½ c. carrots, cut fine [shredded]
Dressing:
3 tbsp. Prepared mustard
1 tbsp. Salt
1/4 c. sugar
2 tbsp. Vinegar
In a large bowl, combine rice, macaroni, eggs, onion, and carrots. Mix dressing ingredients together. Pour over rice mixture and toss to coat. Can be day before serving
