Mini Pineapple Upside - Down Cakes
BASIC RECIPE
Makes: 24 muffins
1 can (20oz.) Crushed pineapple
1/3 c. margarine, melted
2/3 c. brown sugar
1 package (18.25oz.) Yellow or pineapple-flavored cake mix.
Drain pineapple, reserve juice.
Stir together melted margarine and brown sugar. Divide evenly into greased muffin tins. Arrange pineapple over sugar mixture.
Prepare cake mix according to package directions, replace water with pineapple juice. Evenly pour batter into muffin tins.
Bake at 350 deg. For 20 to 25 minutes or until toothpick comes out clean.
Cool 5 minutes. Loose edges and invert onto serving platter.
This recipe didn't use maraschino cherries, but I do.
This is how I make them.
You need two - 12 cup muffin tins, in each cup put 1 tsp. butter-margarine.
NOTE: I set the tins in oven while it is preheating to melt the butter. WATCH carefully,
take out, stir around some to grease tins. Put 1 tsp. brown sugar in each cup, mix well.
You will need one large can of crushed pineapple and a small can, open and drain pineapple, reserve the liquid, add enough water to make 1-14 c.
Put 1 tbsp. Pineapple into each muffin cup.
Take one - (18.25 oz. Box) yellow cake mix or pineapple flavored cake mix
3 eggs
1/3 c. vegetable oil
1-1/4 c. reserved juice and water
12 Maraschino Cherries, halved
Place in large mixing bowl and mix on low until moist and turn to medium speed and mix for 2 min.
Spoon over the pineapple in the tins, NOTE: I use a 1/4 cup, measuring cup to put batter in tins, only fill 2/3 full. Bake at 350 deg. For 20 - 25 min. or until toothpick comes out clean.
Immediately invert on wire rack to cool. NOTE: I don't have racks. I put a cookie sheet over
muffin tin, turn over take off muffin tin. Place a ½ cherry on the center of each cake

You could use a white cake mix or a spice cake mix. You could use canned pie filling instead of pineapple. I haven't tried any other, but sounds good and good pot luck dessert.

maraschino cherries - halved
