Chilled Strawberry Pie

Bake one 10 inch pie crust according to instructions. Serves 6 to 8.
2 tablespoons lemon juice
1/2 to 3/4 cups hot water
2 tablespoons corn starch
1 cup sugar
2 cups mashed strawberries
4 oz. softened cream cheese (1/2 package)
1 baked pie crust.
Topping:
1 carton whipping cream
1/4 cup sugar
1 teaspoon vanilla
Whipped together until soft peaks form.
Or, use non-dairy whipped topping.
Spread cream cheese over the bottom and sides of pie crust. Shake 1/4 cup water and corn starch in a covered shaker to ensure there are no lumps. Cook lemon juice, remaining water, corn starch/water mixture and sugar over medium heat in a thick sauce pan until thick. Stir constantly. Add mashed strawberries and mix well. Pour mixture into the pie crust and chill 1 to 2 hours, covered.
To serve, top with whipped cream or whipped topping.
