Cheese Muffins

These are wonderful muffins to serve with soup, stew, tea or coffee. You can add chopped bacon, chopped onion and parsley. Makes about 12 muffins. Bake at 375 for 10 minutes in a greased muffin tin. Hand mix the ingredients. No need for a mixer.

1 large cup flour
4 oz. grated cheddar cheese
2 tsp. baking powder
1 egg
dash of salt
1/4 cup milk

Blend flour, baking powder, salt and cheese together in one bowl. In another bowl, beat egg and milk together with a whisk. Mix in flour and cheese combo. The mixture will be lumpy, which is fine. Drop mixture into muffin tins using tablespoons. Fill each muffin cup about half full.

Allow muffins to cool for 5 minutes, then loosen muffins with a knife around the edges, and put muffins on a cooling rack. Store in a closed container. Heat 20 seconds in a microwave to warm. Serve with butter.
