Quick, Easy Dinner Rolls

Yields 26
1 cup of warm water
1/3 cup of oil
1/4 cup of sugar
2 Tbsp of active dry yeast
1 egg
3 1/4 cups bread flour (no worries, regular flour works well too)
1 tsp salt if desired (we leave out the salt)
1.Preheat the oven to 400.
2.In the bowl of your mixer combine water, oil, sugar and yeast. Allow to proof for 10 minutes.
3.With dough hook attached mix in dry ingredients and the egg. Knead with hook until the dough forms into a ball and is soft and smooth.
4.With slightly damp hands form into little balls and place in a greased 9 x 13 dish and allow to rest for 10 minutes.
5.Then slide them in the oven for about 15 minutes until they are golden brown.
Notes
This is a very forgiving recipe. I've left my proofing for 20 minutes. I've left them to rise for 30 minutes. Sometimes they look a little funkier than others, but they are always, always delicious!
