Skillet Glazed Drumstick Dinner with Lemony Steamed Broccoli and Rice

3 tablespoons jalapeño jelly
1 teaspoon grated orange zest plus 2/3 cup juice (2 oranges)
1 shallot, minced
2 tablespoons molasses
1 teaspoon cornstarch
3 to 3 1/2 pounds of chicken drumsticks, trimmed
Salt and pepper to taste
1 tablespoon vegetable oil
Lemony Steamed Broccoli (recipe follows)
2 cups cooked rice (brown or white)

Adjust oven rack to middle position and preheat oven to 450 F. Combine jelly, orange zest and juice, and shallot in small saucepan. Whisk in molasses and cornstarch. Simmer mixture over medium heat until thickened, about 5 minutes.

Meanwhile, pat chicken dry with paper towels and season with salt and pepper. Heat oil in 12-inch skillet over medium-high heat until just smoking. Cook chicken until well-browned, about 5 minutes. Add glaze, turning chicken until thoroughly coated. Transfer skillet to oven and roast until chicken registers 175 degrees, about 20 minutes, flipping chicken halfway through cooking. Transfer chicken to platter, season glaze with salt and pepper to taste, and pour glaze over chicken. Serve with Lemony Steamed Broccoli and brown rice.
Makes 4 servings.

Lemony Steamed Broccoli: Combine 1 pound broccoli florets and 1/4 cup water in large bowl. Cover and microwave on High (100 percent power) until broccoli is bright green and tender, about 4 minutes. Melt 2 tablespoons unsalted butter in small saucepan over medium heat (or in a small bowl in the microwave). Whisk in 1 tablespoon lemon juice. Drain broccoli, toss with lemon butter and season with salt and pepper to taste.
