Apple Cider Caramel sauce

3/4 cup apple cider
1/2 cup shortening or butter
1 cup sugar
2 Tbsp maple syrup
1-3 Tbsp corn starch (add more for a thicker caramel, less for a watery caramel)
1 tsp ginger powder
Dash or two of cinnamon
2 Tbsp lemon juice
pinch of salt

1. Dissolve the corn starch into the cold apple cider.

2. Add the cider/starch to a sauce pot with the other ingredients. Bring the mixture to a boil, stirring constantly. When the bubbling becomes intense, reduce to medium heat and continue stirring until the mixture thickens a bit. Optional: whip with beater for a few minutes.

3. Remove from heat. Pour the sauce into a bowl



Note: It is perfect for drizzling over pie, ice cream, or even dipping apple slices!
