Heavenly Beef Tenderloin and Caramelized Onion Sandwiches

2 pounds beef tenderloin
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup mayonnaise
1 tablespoon chopped fresh parsley
1 tablespoon prepared horseradish
1 tablespoon whole-grain Dijon mustard
8 bakery buns, halved, buttered, and toasted
8 slices Havarti cheese
Caramelized Onions, recipe follows
4 cups fresh arugula

Preheat oven to 450. Line a rimmed baking sheet with aluminum foil.

Rub beef with olive oil; sprinkle with salt and pepper. Place on prepared pan, and bake for 35 to 45 minutes or until a meat thermometer inserted in thickest portion registers 135 degrees. Let stand for 10 minutes, and thinly slice.

In a small bowl, combine mayonnaise and next 3 ingredients. Spread mixture over cut sides of buns. Layer sliced beef, cheese, Caramelized Onions, and arugula over bottom halves of buns. Cover with bun tops, and serve immediately.

Caramelized Onions

1/4 cup butter
3 large onions, thinly sliced
1 tablespoon balsamic vinegar
1/2 teaspoon ground black pepper
1/4 teaspoon salt

In a large skillet, melt butter over medium-low heat. Add onions; cover and cook for 40 minutes, stirring occasionally.
Increase heat to medium-high. Uncover and cook, stirring frequently, until onions are caramel colored, 10 to 15 minutes. Remove from heat, and stir in vinegar, pepper, and salt. Use immediately, or let cool, cover, and refrigerate for up to 3 days.
Makes 1 cups (approximately)
