2 c. fresh spinach
2 oz. creamy goat cheese
1/4 c. sun dried tomatoes
1 Tbsp. pine nuts
Fresh Basil Vinaigrette
1/3 c. olive oil
1/3 c. white wine vinegar (white vinegar will substitute fine)
1 Tbsp. minced red onion
1 Tbsp. fresh basil
1/2 clove minced garlic
1/2 tsp. salt
1/4 tsp. pepper
Mix all ingredients until thoroughly blended.
