MARKET VEGETABLES AND CHICKEN

Vegetables
1 onion, sliced
2 small zucchini and squash, sliced
4 Plum tomatoes, sliced
1/4 tsp salt and pepper
4 tbsp. olive oil
1/2 cup shredded Parmesan cheese

Chicken
4 boneless, skinless chicken breasts
2 tsp olive oil
1 tsp seasoned salt or pepper

Heat grill. Cut 4 (18x12 inch pieces heavy-duty foil. Place vegetables on each piece of foil. Sprinkle with salt and pepper, drizzle each with 1 tbsp. oil. Sprinkle with cheese. Wrap each packet securely with double-fold seals, allowing room for heat expansion.

When ready to grill, brush chicken with 2 tsp oil, sprinkle with seasoned salt. Place chicken and vegetable packets, seam side up, on grill 4-6 inch from heat source. Cook chicken 12-15 minutes, turning once. Cook packets 15-20 minutes, rearranging packets several times during cooking. Open packets carefully to all hot steam to escape. Serves 4
