MARINATED CHICKEN BREASTS

Category: Poultry I

4 chicken breasts, with the bone
Marinade
1 cup chardonnay
1/4 cup white wine vinegar brandy, olive oil and Dijon mustard
3 cloves garlic, chopped
12 sprigs rosemary
1 tsp salt
Pepper

Baste
2 tbsp. olive oil and salt
1 tbsp. pepper and dry thyme

Combine wine, vinegar and brandy in a saucepan and cook over high heat until reduce in half. Let cool. Add the remaining ingredients. Pour over chicken breasts and let marinate overnight. Remove chicken from marinade and pat dry. Grill over low medium heat, brushing with baste occasionally. Grill until golden.
