FROZEN CHOCOLATE MINT SQUARES

1 1/2 cups finely crushed chocolate wafers
6 tbsp. butter, melted
7 oz jar marshmallow cream
1/2 tsp mint extract
Few drops green food coloring
3/4 cup miniature chocolate chips
2 cups whipping cream

Combine crushed wafers and butter and press into a 13x9 inch baking dish.

In a bowl, beat the next 3 ingredients until smooth. Fold in 1/2 cup chocolate chips. Whip cream until soft peaks form. Fold into marshmallow cream. Spread over crust. Sprinkle remaining chocolate chips over dessert.

Freeze for 6 hours. To serve, remove from freezer, let stand 10-15 minutes before serving.
