White Cheddar-Chive Drop Biscuits

Yield: approximately 18 biscuits
2 1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons cold butter, diced
2 cups shredded white Cheddar cheese
3 tablespoons chopped fresh chives
1 1/2 cups whole buttermilk
1. Preheat oven to 400. Line a large baking sheet with parchment paper. Set aside.
2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Add cheese and chives; toss with a fork. Make a well in center of flour mixture. Add buttermilk to well. Using a fork, blend mixture until a sticky dough forms.
3. Drop dough by 1/4 cups onto prepared baking sheet, placing biscuits 2 inches apart.
4. Bake until lightly browned, approximately 16 to 18 minutes. Let stand on baking sheet for 2 minutes. Remove from parchment paper, and let cool completely on a wire rack.
