SPRINGTIME PASTA SALAD

1/2 lb penne pasta
1 cup cherry tomatoes, cut in half
3 tbsp. olive oil
1/2 cup cooked frozen peas
1/2 cup red bell pepper, cut into 1/2 inch pieces
1/2 cup cubed fresh mozzarella
1/2 cup red onion, cut into 1/2 inch pieces
4-5 fresh basil leaves, chopped
1 chopped garlic clove

For dressing
1 1/2 tbsp. red wine vinegar
1 chopped garlic clove
1/2 tbsp. balsamic vinegar
5 tbsp. olive oil
1 tsp Dijon mustard

Cook pasta until al dente, rinse under cold water and drain. Transfer to large bowl.

Meanwhile, saute the red pepper & onion until softened, about 3 minutes Add garlic and salt & pepper to taste. Cook about 30 seconds - one minute. Transfer to bowl of pasta and toss. Add drained peas, mozzarella, basil and salt & pepper, to taste, to mixture and toss.

Pour dressing over salad and mix well. Add more salt & pepper to taste and serve.
DRESSING: Combine the vinegars, mustard, garlic and stir with a whisk. While stirring constantly, slowly add olive oil and continue to whisk until blended.
