SPRING SALAD WITH FETA CHEESE DRESSING

4 handfuls spring mix lettuces
12 blanched and cool asparagus spears
1/2 cup thinly sliced cucumber and chopped baby carrots
1/4 red onion, sliced into thin rings
1/4 cup mayonnaise
1 tsp sugar
1/2 cup milk
1/2 cup feta cheese crumbles
Salt and pepper, to taste

In a bowl, combine lettuces and next 4 ingredients. In a separate bowl, combine next 3 ingredients and 1/4 cup feta cheese. Whisk until mixed thoroughly. Pour dressing over salad. Toss gently and season with salt and pepper. Serve in large bowl or individual salad bowls. Top salad with remaining 1/4 cup feta cheese crumbles.
