Southwest Chicken Bake

+ nonstick cooking spray
+ 2 pkgs. (6 oz. each) oven roasted chicken breast pieces
+ 1 box (6 oz.) cornbread stuffing mix
+ 1 can (10 3/4 oz.) condensed cream of mushroom soup
+ 1 can (4 oz.) diced mild green chilies, drained
+ 1 jar (4 oz.) pimientos, drained
+ 1 c. finely shredded Monterey Jack cheese
+ 1 c. frozen whole kernel corn, thawed
+ 1 c. sour cream
+ 1 tsp. ground coriander
+ 1 tsp. ground cumin
1. Preheat oven to 375 degrees. Lightly spray 11 x 7-in. or shallow 2-1/2-quart glass or ceramic baking dish with nonstick cooking spray. In large bowl, stir ingredients until well blended. Spread chicken mixture into prepared baking dish.
2. Cover dish with foil and bake 30 min. Remove foil and bake 10 to 15 min. longer or until top is golden and internal temperature reaches 145°F.
