LEMON CHICKEN

1 (3 lb) chicken, cut into quarters
1/2 cup fresh lemon juice
1/2 cup light clover honey
1/2 cup olive oil
2 cloves of garlic, crushed
1 tsp liquid smoke
1/2 cup finely chopped fresh basil
1/2 tsp coarsely ground pepper
Rinse chicken and pat dry. Remove backbone; flatten breastbone with meat mallet. Arrange in nonreactive dish. Process lemon juice, honey, olive oil, garlic and liquid smoke in food processor for 30 seconds. Stir in basil and pepper. Pour over chicken, turning to coat. Marinate, covered, in refrigerator for 6 hours, turning occasionally. Drain, reserving marinade.
Grill chicken 4-6 inches above medium hot coals for 40 minutes or until cooked through, turning and basting with reserved marinade every 10 minutes. Serves 4-6
