HONEY DIJON BARBECUED CHICKEN

2 (3 lb) chickens, cut into quarters
1/2 cup olive oil
1/2 cup white zinfandel
1/4 cup clover honey
2 tbsp Dijon mustard
2 cloves of garlic, crushed
1 tsp pepper
1/2 tsp salt

Rinse chickens and pat dry. Place chicken quarters in 2 sealable plastic bags. Pour mixture of olive oil, wine, honey, Dijon mustard, garlic, pepper and salt over chicken, seal. Marinate in refrigerator for 2-4 hours, turning occasionally. Drain, reserving marinade.

Grill chicken with lid down over medium-hot coals for 20-30 minutes per side or until cooked through, basting frequently with reserved marinade. Serves 8
