* MACADAMIA COCONUT CARAMEL BARS *

Crust
1 2/3 cup flour
3/4 cup packed brown sugar
1/2 cup butter, softened
Topping
1/2 cup packed brown sugar
1/2 cup butter
1 cup coconut
1 (3.5 oz) jar macadamia nuts, chopped
2 cups milk chocolate chips
Heat oven to 350. Lightly spoon flour into measuring cup, level off. In a large bowl, combine crust ingredients and mix with a fork until crumble. Press mixture evenly in the bottom of a greased 13x9 inch baking pan.
Topping: In a medium saucepan, combine brown sugar and butter. Heat over medium heat stirring occasionally until mixture comes to a full boil. Remove from heat, stir in coconut and nuts. Spoon over crust, spread evenly with a fork. Bake at 375 for 12-18 minutes or until topping is bubbly and edges of crust are golden brown. Remove pan from oven and sprinkle with chips. Let stand 5 minutes to soften chips.
With back of spoon, carefully spread chocolate evenly over bars. Cool 1 1/2 hours or until cooled completely before cutting into bars.
