TEX-MEX SURPRISE CASSEROLE

1/2 lb ground beef
2 tbsp minced onion
1 tbsp seasoned salt
1 (8 oz) can tomato sauce
1 cup whole-kernel corn
1 tbsp chopped red bell pepper
2 1/2 cups taco chips (divided)
1 cup shredded cheddar cheese
1/2 cup shredded Monterey jack, Colby and Colby-jack cheeses

Preheat oven to 350. In skillet, brown meat and onion. Add salt, tomato sauce, corn and peppers. Simmer 5 minutes. Crush 1 1/4 cups of the taco chips and use to line bottom of medium casserole dish. Pour meat sauce over chips. Layer cheeses on top. Top with remaining chips.
Bake in preheated oven 20 minutes, until cheeses are melted. Serves 6-8
