Twice Baked Sweet Potatoes with Apples, Orange Peel and Spices

8 medium sweet potatoes
1/3 cup firmly packed brown sugar
1/2 cup butter, softened
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 tsp. grated orange peel
2 medium Granny Smith apples, peeled, cored and coarsely chopped

Oven at 350. Prick the potatoes all over to let out steam. Bake 55-65 minutes til fork tender. Cut thin lengthwise slice from the tops. Scoop out the insides and place the shells on a baking tray. Blend the insides, butter, spices and sugar in a bowl with a mixer. Stir in the chopped apples by hand and fill the shells. Bake for another 20-25 minutes.
