CHOCOLATE MINT MARBLE COOKIES

1/2 cup chocolate chips
1/4 tsp peppermint extract
1 1/4 cups flour
1/2 cup peanut butter
3/4 tsp baking soda
1/2 tsp salt
1/2 cup butter
1 egg

Preheat oven to 37 Melt chips over very low heat on top of the stove or microwave, stirring constantly. Remove from heat, stir in extract. Cool. Combine the remaining ingredients in a large mixing bowl. Mix well. Add the chocolate and stir just to marble the dough. Shape into 1 inch balls. Place 2 inch apart on an ungreased cookie sheet and flatten the cookie with the bottom of a glass dipped in sugar. Bake 8-10 minutes or until golden brown. Cool slightly before removing from cookie sheet.
