ROCK SHRIMP FETTUCCINE

4 oz rock shrimp, clean and deveined
1 tsp minced shallots
2 strips baccon, chopped
2 tbsp white wine
1/4 cup heavy cream
1 tbsp fresh tarragon
Salt and pepper, to taste
6 oz fettuccine, cooked al dente
2 tsp olive oil
2 oz grated parmesan cheese

While pasta is cooking, fry bacon until crisp. Let drain on paper towels. heat olive oil on high temperature in a saute pan. Add shrimp, bacon and shallots. Cook for a few minutes then add wine to deglaze. Reduce wine until pan is almost dry. Add cream and cook over moderate heat until reduced by half. Season with tarragon, salt and pepper. Toss with pasta and sprinkle cheese on top. Serve.
