SPINACH RASPBERRY SALAD

1 (11 oz) can mandarin oranges (1/2 cup juice reserved)
4 cups fresh spinach, rinsed, drained, and torn
4 cups baby greens, rinsed, drained, and torn
1 red apple, chopped
1/2 cup toasted, chopped pecans, pine nuts or slivered almonds
1/2 cup dried cranberries

Dressing
1/2 cup mandarin orange juice (reserved)
2/3 cup raspberry vinaigrette

Drain oranges, reserving 1/2 cup juice. In a large salad bowl, toss oranges, spinach, lettuce, apple and pecans. Serve with dressing. Yield: 8 servings.
