12 large hard boiled eggs, peeled
2/3 cup mayonnaise
1/3 cup finely shredded smoked cheddar cheese
2 tsp finely chopped dill and Dijon mustard
1 tsp lemon juice
1/4 tsp seasoned salt and ground cumin
1/8 tsp cayenne pepper
Garnish: Pimiento strips

Cut eggs lengthwise in half. Place yolks in a bowl and mash with a fork. Mix remaining ingredients. Mound mixture evenly in cavity of each egg white half. Place on platter, garnish with 2 strips of pimiento criss-corssed atop and serve. NOTE: Can be prepared 4 hours ahead, covered and refrigerated.
