SHITAKE ANGEL HAIR PASTA

6 oz angel hair pasta, cooked al dente, drained
1/2 cup shitake mushrooms, sliced
1 clove garlic, minced
1/2 onion, chopped
1/4 cup white wine
1 tsp olive oil
1/4 cup chicken broth
1/2 cup cream
Salt and pepper, to taste
Garted parmesan cheese
Chopped parsley

While pasta is cooking, saute garlic and onion in olive oil over medium heat, add mushrooms as aroma develops. Add broth and wine. Cook until mixture is reduced by half. Blend in cream and reduce to desired thickness. (Do not allow to boil.) Season with salt and pepper. Pour sauce over drained pasta and toss until coated. Sprinkle with parmesan cheese and parsley. Serves 4
