Peanut Butter Cup Stuffed Sugar Cookies

2 sticks butter or margarine, softened
1 cup granulated sugar
3/4 cup brown sugar
2 large egg(s)
1/2 teaspoons salt
1 Tablespoon pure vanilla extract
3 1/2 cups all purpose flour
1 teaspoon baking soda
2 packages of the 12 snack size REESE'S Peanut Butter Cups

Preheat oven to 350. Using a mixer, cream butter and sugars until well combined. Add eggs and vanilla until well combined.
2 In another bowl combine flour, baking soda and salt; slowly add dry ingredients to your wet ingredients.

Using #40 ice cream scoop (or divide dough into 48 equal balls), take one scoop of cookie dough and place on bottom of each REESE’S Peanut Butter Cup. Take another scoop of dough and place on top of each REESE’S Peanut Butter Cup. Seal edges together by pressing and cupping in hand until REESE’S Peanut Butter Cup is enclosed in cookie dough.

Place each cookie onto a silpat lined baking sheet and bake for 10-15 minutes or until cookies are done. Let cool before moving to cooling rack.

Makes about 24 LARGE Cookies
