*RANCH POTATO CASSEROLE I*

1 1/2 bags frozen hash brown potato cubes, thawed
2 (8 oz) pkg cream cheese, cubed
1 can cream of potato and cream of chicken soups
2 envelopes Ranch dressing mix
1 1/2 cups shredded 4-blend Mexican cheese, divided
1 cup French fried onion rings
In a large bowl, blend soups and cream cheese. Microwave until creamy and cheese is melted, stirring occasionally. Stir in well, the dressing mix, and then fold in 3/4 cup shredded cheese, then the potatoes. Fold well until potatoes are coated. Pour into a lightly greased 13x9 inch baking dish, mashing down a little, and spreading in pan evenly. Sprinkle top with rest of cheese.
Cover and bake at 350 for 50-55 minutes. Uncover, top with onions. Bake, uncovered, for another 5 minutes or until onions are lightly browned. Note: For a complete meal, fold in 1 cup diced fully-cooked ham and sauteed onions, mushrooms and a garlic clove.
