LEMON CREAM CHEESE FROSTING

1 (8 oz) pkgcream cheese, softened
1/4 cup butter
2-4 tbsp lemon juice
2-3 tsp lemon zest
1 tsp vanilla extract
5 cups confectioners sugar

Beat cream cheese, butter, lemon juice, lemon rind, and vanilla together until smooth and fluffy. Add confectioners sugar in 2 additions. Beat until creamy. Add more icing sugar or juice as needed for easy spreading. Makes about 3 2/3 cups.

NOTE: Start with 2 tbsp lemon juice. After beating in all the ingredients, if necessary, add additional lemon juice 1 tbsp at a time for a more lemony taste.
