Shelly's Recipe

SOUTHWESTERN TURKEY MELT

1/4 cup salsa
3 tbsp mayonnaise
3 scallions, thinly sliced
3/4 lb sliced turkey
8 slices sourdough bread
4 slices pepper jack cheese
4 tbsp butter

In a small bowl, combine first 3 ingredients and mix well. Evenly divide the turkey and cheese over 4 slices of bread.

In a large skillet, melt 2 tbsp butter over low heat. Place the sandwiches in the skillet and cook for 2-3 minutes. Add the remaining butter to the skillet, then turn the sandwiches over and cook for another 2-3 minutes or until cheese is melted. Serve immediately. Makes 4 sandwiches
