1/4 cup lemon juice
6 oil-packed anchovy fillets, drained and very finely chopped
1 tbsp Dijon mustard
2 garlic cloves, pressed
1 1/2 tsp Worcestershire sauce
1 cup olive oil


Whisk all ingredients except oil in a small bowl to blend. Carefully whisk in oil. Season with salt and pepper. Note: Can be make 1 day ahead. Cover and chill. Rewhisk before using.)

Variation: Mix 1 cup and 2 tbsp prepared Caesar dressing with 1/4 cup and 2 tbsp vinaigrette dressing. Blend well. Chill until ready to use.
