1 zucchini and yellow squash, coarsely chopped
1 onion, chopped
1 carrot, chopped
1 bell pepper, chopped
1/2 lb mushrooms, quartered
1 clove garlic, minced
1 tbsp chopped parsley
1 tbsp olive oil
1/4 tsp pepper
1 tsp salt
1 (14 1/2 oz) can whole tomatoes
1 (8 oz) can tomato sauce
1 pkg dry spaghetti sauce mix
1/2 cup water or red wine
1 tsp sugar
Optional add-ins: chopped prosciutto

Saute vegetables in olive oil until tender. Add remaining ingredients, breaking up the tomatoes. Simmer 10 minutes.
