CREAMY PASTA SAUCE from Emeril

1 tbsp olive oil
1/2 cup small diced Tasso sausage
2 tbsp minced shallots
1 lb chopped lobster meat or crawfish tails
1 tbsp minced garlic
1/2 cup peeled, seed and chopped Italian Plum tomatoes
1/2 cup chopped green onions
1 1/2 cups heavy cream
2 tbsp butter
1/2 cup grated parmesan cheese
2 tbsp chopped chives
Salt and pepper
In a saute pan, heat oil, add sausage for to minutes. Add shallots and lobster meat, saute for 1 minutes. Stir in garlic, tomatoes and green onions, saute for 1 minute. Season with salt and pepper. Stir in the cream and bring up to a boil. Reduce to a simmer and cook for 4-6 minutes or until the sauce has reduced enough to coat the pack of a spoon. Season with salt and pepper. Add butter into the sauce. Garnish with cheese and chives. Note: Good serves with angel hair pasta.
