CREAMY BACON AND MUSHROOM SAUCE

1/2 lb bacon
1 cup green onions, white part only – sliced
1/2 cup green onion, green part – minced
1 cup mushrooms, quartered
1/2 cup parmesan cheese
1/2 cup white wine
1 cup chicken stock
1 cup heavy whipping cream
1 tbsp essence spice mix (located in Miscellaneous - spice mixes)
Salt and pepper, to taste
Saute bacon until soft brown; remove from pan. Save about 2 tbsp drippings and saute mushroom and white parts on onion for about 2-3 minutes; remove from pan. Deglaze pan with wine and reduce by half. Add stock and reduce by half again. Add whipping cream and reduce until mixture coats the back of a spoon. Add remaining ingredients and cook for another 2-3 minutes. If sauce is to thin; you many need to add some lemon juice to tighten up. Garnish with green parts of onion. Note: Serve with cooked linguine.
