CAJUN MUSHROOM SAUCE

3 tbsp butter
1 1/2 cups thinly sliced mushrooms
2 tbsp flour
1/2 cup cream
1/2 cup chicken stock
1/4 tsp garlic powder and white pepper
1/2 cup picante salsa
2 tbsp blackened fish seasoning
Melt 1 tbsp butter in a pan and saute mushrooms, set aside. In a medium saucepan, melt remaining butter and stir in the flour until dissolved. Add next 4 ingredients, stirring constantly. Cook until sauce thickens. Do not boil. Once thickened, reduce heat and cover. Cook for 2 more minutes. Add remaining ingredients and heat through. Hold warm until ready to serve. Good serves over chicken or fish.
