BOLOGNESE SAUCE

2 tbsp olive oil
1 onion, carrot and celery stick, finely chopped
2 cloves garlic, finely chopped
1 lb ground beef and Italian sausage (skinned removed)
1 cup red wine
18 oz crushed tomatoes
Salt and pepper, to taste
1 tsp chopped rosemary and sage
In a saucepan, heat oil and add vegetables and garlic. Cook gently about 5 minutes. Add meat; cook 10 minutes over medium heat, stirring occasionally. Deglaze pan with wine, let reduce. Add tomatoes and remaining ingredients, simmer slowly about 1 hour.
