SWISS CHEESE BROCCOLI

1 lb broccoli, coarsely chopped
Salt
3 tbsp butter
2 tbsp flour
3 tbsp chopped onion
1 1/4 cups milk
2 cups shredded Swiss cheese
2 eggs, beaten
Preheat oven to 325. Grease a casserole dish. In a medium saucepan over high heat, in 1 inch boiling water, heat broccoli and 1/2 tsp salt to boiling; cover and cook 10 minutes; drain; set aside.
Meanwhile in a saucepan over medium heat, melt butter, stir in flour and 1 1/2 tsp salt until smooth. Add onion and cook 1 minute. Slowly stir in milk; cook, stirring constantly, until mixture thickens and begins to boil; remove from heat. Stir in cheese and broccoli into mixture until cheese melts slowly; stir in beaten eggs. Pour into baking dish and bake for 30 minutes or until center is firm to the touch. Serves 8
