BROCCOLI AND ONION CASSEROLE
Category: Broccoli
1 lb or 2 (10 oz) pkg frozen broccoli, cut up
3 medium onions, quartered
1/4 cup butter
2 tbsp flour
1/4 tsp salt
Dash pepper
1 cup milk
1 (3 oz) pkg cream cheese
1/2 cup cheddar or American cheese, shredded
1 cup bread crumbs
Cook broccoli until crisp-tender. Drain. Cook onion in boiling salted water until tender. Drain. In a saucepan, melt half of the butter, blend in flour, salt and pepper. Add milk, and cook stirring constantly, till thickened and bubbly. Reduce heat and blend in cream cheese till smooth. Place vegetables in a 1 1/2 quart casserole. Pour sauce over and mix lightly. Top with cheese. Melt the remaining butter and toss with bread crumbs. Sprinkle over the casserole. Bake at 350 for 40-45 minutes. Serves 6
