CARAMEL ICING

3/4 cup butter
1 1/2 cups light brown sugar
1/4 tsp salt
1/3 cup evaporated milk
24 oz confectioners sugar
1 tsp vanilla
1 tsp brandy, optional

In a saucepan, melt butter. Add brown sugar and salt. Cook over low heat for 2 minutes, stirring constantly. Add milk; continue stirring until mixture comes to a boil. Remove from heat; beat in confectioners’ sugar. Add vanilla and brandy, mixing well.
