Macaroni & Cheese

1 Tbsp vegetable oil
1 pound elbow macaroni
1 stick of butter plus extra for casserole dish
1/2 cup shredded Muenster cheese
1/2 cup shredded mild cheddar cheese
1/2 cup shredded sharp cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 can cheddar cheese soup
2 cups half / half
2 large eggs, lightly beaten
salt and pepper, to your taste

Preheat oven to 350 degrees F. Butter casserole dish in oven until melted.

Bring large pot of salted water to a boil over high heat. Add the oil, then macaroni and cook until just tender, about 7 - 8
minutes. Do not overcook. Drain well and return to the pot.

Add the stick of butter to macaroni until melted and mix in chesses, leaving a little left to add to casserole dish. Add the half / half, eggs and cheese soup. Season with salt and pepper. Transfer to the buttered casserole dish and sprinkle
with some shredded cheese.

Bake until bubbly and brown, about 45 minutes.
