BACON WRAPPED STUFFED SHRIMP I

Seasoning mix
1/2 tsp salt and paprika
1/4 tsp allspice, black and cayenne peppers

Dipping sauce
2/3 cup ranch dressing
1/2 tsp dried cilantro or 1/2 tsp fresh minced cilantro

10 pieces bacon
10 large shrimp, shelled, leaving tail intact, devein and butterfly
6 slices fresh jalapeno
2 oz pepper jack cheese

Preheat oven to broil. Combine seasoning mix in a small bowl and set aside. Combine dipping ingredients and set aside. Cook bacon about 3 minutes per side being careful not to brown. When done, lay on paper towels to drain and cool. Pour 1 cup water into a small bowl. Add shrimp and peppers and microwave for 60-20 seconds. Shrimp should be starting to firm up and change color. Immediately pour water out of bowl, remove jalapeno and pour cold water over shrimp. Place shrimp and pepper slices onto paper towels to drain.

Build appetizer by cutting pepper slices in half and removing seeds. Place 1 slice into slit of shrimp. Cut a 1 inch chunk of cheese, about 1/4 inch thick, and place on jalapeno slices. Wrap a piece of bacon around shrimp, starting where cheese is.

Start wrapping with thinnest end of bacon and go 1 1/2 times around shrimp and then cut excess bacon and slice a skewer through the shrimp, starting with end where cheese is and piercing bacon on the other side. Repeat with remaining shrimp and slide them onto skewer with tails facing same direction.

Put skewer onto a baking sheet or broiler pan; sprinkle a very light coating of seasoning blend over shrimp, then broil 3-4 minutes or until bacon begins to brown and cheese begins to ooze. Serve over a bed of rice, if desired. Serves 4
