ARTICHOKE BALLS

2-3 clove garlic, mashed
6 tbsp olive oil
1 (14 oz) can artichoke hearts, drained and mashed
2 eggs, well beaten
1 1/2 cups seasoned bread crumbs
1 cup Parmesan or Romano cheese
Salt and pepper, to taste
Additional seasoned bread crumbs

In a skillet, saute the garlic in the olive oil. Add the artichoke hearts and simmer for 2 minutes. Fold in the eggs and simmer for 2 minutes. Add the bread crumbs and cook 2 minutes. Remove the mixture from the heat, add the cheese, mix well and cool. When the mixture is cool. Taste to adjust seasoning. Form into bite-size balls. Roll into bread crumbs and bake at 350 for 10 minutes.
