* CARROT CAKE

Category: Cakes

Mix together:
2 cups sugar
1 1/2 cups oil
4 eggs
Add:
2 cups flour
1 teaspoon cinnamon
2 teaspoons soda
1 teaspoon salt
1 teaspoon vanilla
3 cups grated carrots
1/2 cup chopped pecans

Bake for 45 to 55 minutes at 325 degrees

FROSTING
Cream together:
1 - 8 ounce package of cream cheese
1/4 pound butter
Add:
1 pound powdered sugar
2 teaspoons vanilla
1 teaspoon lemon juice
1/2 cup chopped pecans (optional)
