LINGUINE WITH SCALLOPS

1 lb linguine, spaghetti or thin spaghetti, cooked al dente
1 medium bell pepper, seeded and diced
1 medium onion, halved and thinly sliced
2 cloves garlic, minced
1 tbsp olive oil
1 (28 oz) can diced tomatoes, drained
1/4 cup pitted and chopped black olives
1 tsp dried oregano
1 lb small scallops
1/4 cup chopped parsley
Coarsely ground black pepper

While pasta is cooking, saute vegetables and garlic in oil for 5 minutes or until edges of the onion turn golden. Add tomatoes, olives and oregano; heat until simmering. Add scallops and simmer 3-4 minutes. When pasta is done; drain will and top with sauce. Add parsley and sprinkle with pepper. Serve immediately.
