PECAN-FILLED COOKIES

1/2 cup butter, softened
11/4 cups packed light brown sugar, divided
1 egg
1 tsp vanilla extract
2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chopped pecans
2 tbsp sour cream
Preheat oven to 350. Grease baking sheets. COOKIE: In medium bowl, cream together butter and 1 cup brown sugar until smooth. Beat in egg and stir in vanilla.
In a separate bowl, combine next 3 ingredients; stir into the sugar mixture. Roll the dough into 1 inch balls and place them 2 inch apart onto the prepared baking sheet. Make an indention in the center of each ball.
FILLING: Mix together pecans, sour cream, and remaining 1/4 cup brown sugar; fill each indention with the mixture. Bake for 8-11 minutes or until light brown. Cool for a few minutes on baking sheets before removing to wire racks to cool completely.
