CARAMEL APPLE RAISIN CRUNCH COOKIES

1 cup finely diced pared apples
1/4 cup raisins and Chopped pecans
1/2 cup sugar
2 tbsp water
1 1/2 cups flour
1 tsp baking soda and cinnamon
1/2 tsp salt
3 cups quick-cooking oats
1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
Caramel ice cream topping
In a saucepan, combine the first 5 ingredients. Bring to a slow boil; cook and stir until apples are soft and filling is thickened, about 10 minutes. Set filling aside. Preheat oven to 350. IN a small bowl, mix together the dry ingredients. Set aside. Cream together the next 3 ingredients. Add eggs and vanilla. Stir in the flour mixture. Drop a rounded tsp of cookie dough on greased cookie sheet. Make a well in the center of the dough. Drop in 1/2 tsp of apple filling. Drop dough on top of filling. Repeat with rest of dough and filling. Bake 10-12 minutes. Drizzle cookies with caramel topping.
