HAM AND NOODLE BAKE

1/2 lb egg noodles, cooked
4 tbsp butter
1 small onion, finely chopped
1 cup roughly chopped mushrooms
2 cups chopped carrots
1/2 cup chopped celery
2 (8 oz) pkg frozen chopped broccoli, thawed and squeezed dry
3 eggs, lightly beaten
1 1/2 cups sour cream or 1 can each cream of onion soup and cream of chicken soup
1 tbsp chopped parsley
1/2 cup grated cheddar cheese
1/2 cup Cheese Whix
1 1/2 cups cooked ham, finely chopped
Salt, black pepper, cayenne pepper and garlic powder, to taste
Butter a 2 quart casserole dish. Melt the butter in the skillet. Saute the vegetables over medium heat until soft.
In a small bowl, mix the eggs, sour cream and parsley. Add the onion, cheese and ham. Add seasonings to taste. Place the noodles in the casserole dish. Add the ham mixture and toss gently. Bake at 350 for 30-45 minutes or until casserole is set. Serve immediately.
