GROUND BEEF SHEPHERDS PIE

1 tbsp vegetable oil
1 onion, chopped
1 lb ground beef
1 tsp dried basil
1 clove garlic, minced
1 cup green beans, drained
1 cup tomatoes, diced
2 potatoes, cooked and mashed
1 egg, beaten
1/2 cup water
1/4 cup shredded Cheddar cheese, optional
Preheat oven to 350. Heat oil in a large skillet over medium heat. Add onion and saute for 5 minutes. Add the ground beef and basil and saute for 5 more minutes. Add the garlic, green beans and tomatoes, stir well, and simmer for 5 minutes. Pour mixture into a 2 quart casserole dish.
In a separate medium bowl, combine the potatoes with the egg and water. Mix well and spread over meat mixture. Bake at 350 for 15 to 20 minutes, or until potatoes start to brown on top. Sprinkle with cheese, if desired, 5 minutes before done cooking. Serves 4
